Raw: the restaurant specialising in raw food
In the heart of the Haut Marais, Chef William Pradeleix, aided by his wife Marie, has opened his second Parisian restaurant, after Will, called Raw. Here, he serves a raw cuisine created from fresh and seasonal ingredients. Fragrant and colourful, almost painterly, the dishes lean heavily on smoked fish, carpaccios, marinades, tartares and condiments from Asia. So here the Limousin veal comes tataki style, with sesame, green apple and edamame; and the cockles are accompanied by pickled rhubarb and ginger butter. For dessert, why not be tempted by licorice mousse, cucumber jelly and celery syrup. The menu changes regularly, reflecting the chef's inspirations. Note: the restaurant has an interesting biodynamic wine list which has been carefully chosen by Marie.
Open from Wesneday to Saturday for lunch and evening, and on Sunday noon.
