Solier that has been existing for nearly 40 years, decided 5 years ago to get involve in protecting the planet. How fo they respect the planet? A lifestyle that this small company of about twenty employees is trying to set up throughout its professional collaborations. Difficult, daily struggle, ecology requires a unwavering motivation. Because ecology is necessary and the solution, Solier tries to persuade its customers to opt for certified organic products. Today, the price is no longer a valid reason for refusing to take on organic, because the products offered by Solier, whether chemical or ecological, are all at the same price. Moreover, the range of chemicals the company sells keeps declining gradually replaced by labeled products. A sign of the awareness of professionals, especially in the hospitality industry where Gavarni Hotel is regarded as a precursor.

Kennedy Pressing: ecofriendly dry cleaner in Paris

Opened in October 2007, the Kennedy Pressing can be proud of being  the only ecofriendly dry cleaner in Paris. In comparision with dry cleaners still using traditional perchlorethylene for dry cleaning, Stéphane Sibony director, placed a natural product, a solvent-based silicon. At the time it was launched on the market, nobody knew Decamethylcyclopentasiloxane (D5), but everyone knew that perchlorethylene was very toxic. Banned in some Nordic countries like Sweden or Finland, perchlorethylene will also be ban in California by 2012. When will it be in France?

The Gavarni hotel was therefore not wrong in choosing a quality service, haute couture specialist: where perchlorethylene mells beads and sequins dresses, handbags, D5 ensures a very quality result, made entirely by hand. Roasting company based in Bordeaux, Destination has emerged on the market of organic stores and supermarkets in just few years. Today the leader in organic coffee, tea, sugar and cocoa, this brand is a must.

Destination has always been organic or is it new?
Christophe Lambard, CEO:
Originally, we were on luxury food products and after one year of existence, we have taken the lead in organic and fair trade which for us is a logical sequence. Organic now represents over 95% of our volumes. When we created the company, 10 years ago, we wanted to democratize organic food products by providing the truth about their prices. The problem is that this market has too many intermediaries, a way to higher margins, which has never been our case we are not organic opportunists.

Tell us about your business.
Christophe Lambard:
We are apart from flash-cooking industrial (3 to 6 minutes), our slow roasting, between 17 to 20 minutes, allows to reveal the full flavor, which is not the case at a flash roasting where a large proportion of flavor is not created by the absence of the Maillard reaction (chemical reaction occurring naturally on the bean after 15 minutes).
It is through slow cooking, and only through this process that the full aroma of coffee can be revealed. We are direct importer of coffees, teas, sugar, cocoa and more recently, regional gourmet organic products such as olive oil, mountain honey, ham or Iberian Pata Negra. All our developments are based on travel (I have visited more than 120 countries until now) and events around which we build strong alliances.
We find courageous hotels and restaurants where people got to organic food, because it is always more complicated in this area to develop this approach with guests. We welcome the choice of the Hotel Gavarni.

How do you see the future of organic?
Christophe Lambard:
In this time of crisis, our approach is highly understood by consumers who trust us. We have always believed that only the will of the men will return to 100% organic. 50 years ago, there were only natural and organic products. If we want to go faster, it is through the consumer information and fair pricing of organic products that we permanently remove all the obstacles related to their expansion.

Moisan: the 100% organic bakery

Opened last year in Boulogne (92), the bakery Moisan (network Parisian bakeries with the same name) is headed by Mr Wiame, who after a few years with Fauchon and Ladurée, turned to organic food. Gourmet, lover of beautiful and good things, he likes well-made products. Stroke of luck, this is the case at Moisan’s where Christian Vabret, Meilleur Ouvrier de France (Best Worker in France), frames and transmits his know-how to young bakers. Only 100% organic baker France, from sandwich to juice, through bread and pastries, the bakery is ecofriendly.

Do not expect to find your usual lunch menu: sandwich, tart and Coke here because this kind of drink is prohibited. Only the water is not organic! With contemporary decor and the possibility of eating on-site, the bakery Moisan is a paradise that delivers also companies, hotels and pastry. Moisan has been providing Gavarni hotel recently in cakes and pastries for breakfast. Price-side, we are in the same range as traditional bakeries, with the “flute de campagne” at 1.15€, tart from 2.70€ and the butter croissant is 1€. Eating organic is becoming an ethical choice rather than financial…

Jamet’s loves Planet: the expert in organic breakfast

On which criteria are the clients most demanding? Breakfast it is, because it is an important moment of the day and commonly the last thing we see before check out of the hotel. The brand created by the Bristol Palace former land owner Pierre Jammet has reinvented the hotelier services when it comes to breakfast. For the last 5 years, Jerome Stefanello has been running the business and has specialized the brand in the organic industry. Why? Because it is the lifestyle that he leads everyday, and because the link between food and nature should be obvious and natural.

Jammet provides the Gavarni hotel with cereals (presented in design distributors in order to avoid packaging that is noxious to the environment), stewed fruit and jam. This committed firm has an objective: “offer custom-made products and maintain a close relation with the clients, in order to stand out from standard offers and the influence of big brand of food-processing”.

Although it is hard to convince small breeders to participate in this green movement, Jerome Stefanello tries to convert people he meets and make them join him in this cause for excellence and safe products. Let’s also mention that the more stars a hotel has, the more we pay attention to its participation in preserving the environment! Another element in the search for excellence and quality.
